Cooking Equipment

In kitchen operations, electrical equipment is most often damaged through overloading and/or electrical insulation breakdown, resulting in shorting of wiring or bus structures. Poor housekeeping and lack of maintenance can lead to loosening and overheating of connections. Electric ovens, stoves, steamers, broilers, microwaves, jacketed kettles and other cooking equipment can be found in many school kitchens. The electronic components of this equipment may have low voltage circuitry that can be damaged by power disturbances.
